The GanzTierStark project is investigating, in close collaboration with practitioners, how the use of regional organic beef from animal-friendly grazing systems can be strengthened in canteens in Berlin and Brandenburg. To ensure that this is economically viable for all partners along the value chain – agricultural and processing businesses as well as canteens – the project focuses on whole-animal utilisation.

The project also examines the legal and organisational requirements, the reliable supply of the required quantities, and the quality of meat products along the entire value chain.

The aim is to analyse experience from across Germany, identify barriers and develop practical solutions.

 

A joint initiative of the Centre for Technology and Society at Technische Universität Berlin (ZTG), Eberswalde University for Sustainable Development (HNEE), Fördergemeinschaft Ökologischer Landbau Berlin-Brandenburg e.V. (FÖL), Marktgesellschaft der Naturland Bauern AG, a’verdis and other cooperation partners.
