Organic beet sugar competes in the market with lower-cost organic cane sugar. The specific qualities resulting from its production process require further explanation for both consumers and food processors. The Uckerzucker project analyses the requirements and interest of food-processing companies in regional organic beet sugar, as well as the needs and interests of consumers in relation to their consumption of sugar and organic foods containing sugar.
